Today is going to be full of canning. Peaches are coming off like crazy, and I’m trying to get them before the little critters that lay eggs in them take over. The resulting little worms spoil the peach from the inside out. I believe I will mostly make jam today, but I wouldn’t mind some plain canned peaches either. The jam is the most valuable product I can make since it is so expensive in stores and I use it so much through the winter. Plus, my jam is affordable even without high-fructose corn syrup! Below is a picture of my peach tree loaded down so heavily the branches are laying on the ground!

Every year I praise God for the bounty off this tree, but at the same time I can hardly wait until my children are capable of reliably helping me skin, pit, and slice this fruit for canning! I currently have a laundry basket full of them and have to do all the work to preserve them. Last year I was blessed by a family coming to help me out of the goodness of their hearts, and I was so very thankful! If my hands are not too stiff, I will have jam pictures for you tonight!
